Chocolate Chip Protein Blondies Recipe
Prep Time: 10 minutes | Blend Time: 20 minutes | Total Time: 30 minutes
This protein blondies recipe delivers that golden, chewy, caramel-like bite you crave, only smarter. We fold almond flour, ripe banana, dark chocolate chips, and vanilla Purimo whey protein into a batter that bakes up dense, soft, and satisfyingly sweet. Purimo Pure Whey blends premium whey concentrate and isolate, is naturally sweetened with stevia, and provides 22 g protein per 30 g serving, so your protein blondies work just as hard as you do.
Ingredients
- 180 g almond flour (extra-fine)
- 60 g Purimo Pure Whey (vanilla)
- 1 tsp baking powder
- 1/4 tsp fine sea salt
- 2 large eggs, room temperature
- 200 g ripe banana, well-mashed (about 2 medium)
- 60 g melted coconut oil (or 50 g light olive oil)
- 1 tsp vanilla extract
- 90 g dark chocolate chips (60–70% cocoa)
- Optional: 30 g chopped walnuts for extra crunch
Notes and smart swaps:
- Sweeter, lower-sugar option: Replace banana with 60 g xylitol or erythritol and add 80–100 ml milk (dairy or unsweetened almond) to match batter moisture.
- Higher protein: Increase Purimo Pure Whey to 75 g and add 20–30 ml extra milk to keep the batter scoopable.
Method
- Prep. Heat oven to 175°C (fan 160°C). Line an 20 cm square tin with baking paper, overhanging two sides for easy lifting.
- Dry mix. In a large bowl, whisk almond flour, Purimo Pure Whey, baking powder, and salt until evenly combined.
- Wet mix. In a separate bowl, whisk eggs, mashed banana, melted coconut oil, and vanilla until smooth.
- Combine. Fold the wet mix into the dry until just combined. The batter will be thick. Fold in chocolate chips (and walnuts, if using).
- Bake. Spread evenly into the lined tin. Bake 18–22 minutes until the top is set, edges are lightly golden, and a skewer comes out with a few moist crumbs.
- Cool and slice. Cool in the tin for 15 minutes, then lift out and cool fully. Slice into 16 squares for snack-size protein blondies.
- Store. Keep in an airtight container: 3 days at room temp, 5–6 days chilled, or freeze up to 2 months.
